Kefir Bread

This is an amazing bread if you get an abundance of kefir – which you will if as your grains grow. Simplest bread I’ve ever made and no additives like in so many store bought bread. It’s kind of a sourdough bread where the kefir acts as the leavening agent.

(Easy) Tangy Kefir Bread
4 c. whole wheat flour
salt to taste (about 1 tsp.)
2-1/2 c. kefir whey

Mix all. Let rise till doubled (24-36 hours). Put in pre-heated 375 oven in a greased 3-quart baking dish with a cover (cast iron if you have one). Bake about 1 hour. Really comes out super and you have the added advantage that soaking your grains before cooking gives you!
